Spicy spinach cheese dip [recreation]

One of my favourite places to go out for drinks and appetizers is Rock Bottom Brewery, which is conveniently located next to my local movie theater. They have a delicious spicy spinach cheese dip that’s served with vegetables, focaccia, and tortilla chips, or beer basted ballpark pretzels. After having this dip for the first time, I searched around on the Internet for a mock recipe. While this recipe isn’t perfect, it’s pretty close and quite tasty regardless. Sweet red pepper

Prep: 10 minutes
Cook: 5 minutes
Yields: approx. 8 people

Ingredients

  • 1 cup drained diced tomatoes
  • 4 oz frozen spinach thawed, dried off
  • 1/2 cup diced sweet red peppers
  • 1 1/2 cup minced yellow onions
  • 1 1/2 cup half-and-half
  • 3 3/4 cup grated pepper jack cheese (I use the brand Tillamook)
  • Snacks to serve with the dip, such as: carrots, celery, chips, breads, and crackers

Steps

  1. Place minced sweat onions in a medium saucepan.
  2. Add half-and-half and bring to a boil.
  3. Slowly add grated cheese, stirring until melted and smooth.
  4. Blend in spinach.
  5. Mix in tomatoes and peppers, stirring to remove lumps.
  6. Refrigerate until needed.

Change it up! Try this dip as a sauce, pouring over something like nachos and chicken, or over shrimp.

Happy birthday on the eve of the new year!

Aloha and happy new year! One year ago today, on New Year’s Eve, Eatables was born! I can’t believe it’s already been a year. It’s amazing how much time flies. Eatables has developed a lot over the last year, moving from Blogger to WordPress. And now I’m even thinking of moving to my own domain.Speaking of which, I need your help readers. Unfortunately, www.eatables.com is taken so I have to pick something else. I can’t really decide what to make the web address that’s easy to spell and remember, and of course, still has “eatables” in the address.Have any ideas or suggestions? Let me know in the comments.Anyway, back to reminiscing… Here is a round up of some of my favourite recipes from this year are:

Cranberry blueberry muffins

With cranberries in season, now is the time to make delicious foods using them. Though fresh cranberries taste the best, these muffins can be made year round with dried cranberries. Either way, they a make a pretty yummy breakfast. The mix of the two types of berries creates a dynamic flavour too. Enjoy :)

Cranberry blueberry muffins

 

Prep time: 10 minutes
Bake: 20-25 minutes
Makes: 12 muffins

 

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 cup oil
  • 1/2 cup fresh or sweetened dried cranberries
  • 1/2 cup fresh or frozen blueberries
  • 2 teaspoons sugar

StepsBlueberries

  1. Preheat your oven to 400°F. Grease a 12-cup muffin tin.
  2. In a medium mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix egg, milk and oil together.
  4. Add liquid to dry ingredients, stirring just until it is moist. Gently stir in blueberries and cranberries.
  5. Fill muffin cups with batter and then sprinkle muffins with remaining 2 teaspoons sugar.
  6. Bake for 20 to 25 minutes or until golden brown. Remove muffins from the pan and cool on wire rack. I like eating fresh and warm out of the oven.

Chocolate Oreo bark

Looking for a pretty and quick dessert for a party? Dessert bark is always a great treat for a group of people or to give as a gift in a Christmasty tin. You can also serve it along with a scoop of ice cream or You can try a variety of different flavours. Have fun and enjoy :D

Chocolate cookie bark

Prep: 10 minutes
Freeze: 5-7 minutes
Serves: approximately 15 pieces

Ingredients

  • 1 pkg. of semi-sweet (or dark) chocolate squares or 12 oz. bag of baking chips
  • 1 pkg. of white chocolate squares or 12 oz. bag of baking chips
  • 1 Tbsp. peanut butter
  • 10 Oreo cookies, crumbled and divided

StepsChocolate cookie bark

  1. Microwave each type of chocolate separately until melted.
  2. Add peanut butter to white chocolate and mix. Make sure not to over mix the chocolate or it will start to become runny.
  3. Add half of Oreo crumble mix (five cookies each) to each chocolate mix.
  4. Place a sheet of wax paper on a baking sheet.
  5. Add a spoon drop of each chocolate alternately. Use a knife to swirl the chocolate around to create a marble effect.
  6. Place in your freezer for five minutes or until completely hardened. Then brake into pieces and store in airtight container in your fridge until ready to serve.

Desserts galore! [round up]

With the holiday baking season upon us (and in my case, the 3rd annual Hinman dessert party tomorrow), here is collection of some great holiday recipes. I always make haystacks and frosted sugar cookies for my dessert, but they are all delicious and rather easy to make! Enjoy :)
